caramelized banana and cocoa muffins - gluten free! -

< Ingredients >
Makes about 5-6 muffins

Caramelized bananas
2 bananas
5 tablespoons (50g) beet sugar
1 tablespoon (10g) water

120g unbleached flour
20g cocoa powder
1.5 teaspoons baking powder

90ml maple syrup
90ml rice oil
140ml soy milk
1 pinch of salt

< Instructions >
Caramelized bananas
1. Slice the bananas into about 1/3inch rings
2. Add the beet sugar and water in a pan and cook until the syrup thickens and browns
3. Add the sliced bananas into the pan and sauté them
4. Transfer the bananas onto a plate and let them cool

1. Preheat the oven to 350F
2. Sift all the ingredients in section A and mix them well using a whisk
3. Combine all the ingredients in section B in a bowl and mix them well using a whisk
4. Add the section B ingredients to the section A ingredients and mix them well using a whisk
5. Add the caramelized bananas into the mixture and mix with a spatula
6. Spoon the batter evenly into a prepared muffin cup
7. Cook in the preheated oven for about 30 minutes until a toothpick inserted into the center of a muffin comes out clean
