coconut cookies - gluten and soy free!! -

< Ingredients >
Makes about 20 cookies

6oz White Rice flour
3oz Almonds (or Almond flour)
3 Tablespoons Coconut oil
2 Tablespoons Maple syrup

< Instructions >
1. Preheat oven to 325°F.
2. Grind almonds by using a food processor. (You may use almond flour)
3. Combine white rice flour and almonds in a bowl.
4. Add coconut oil and maple syrup, mix everything well, and form a dough.
5. Roll out the dough and cut out shapes.
6. Bake in the oven for 15-20minutes.
